Busch's Grilled Eggplant

Ingredients

  • 1 1/2 lb 
    Eggplant
  • 4 tbls 
    Canola Oil
  • 1 pinch 
    Table Salt
  • 1 pinch 
    Black Pepper
  • 1 sprig 
    Parsley
  • 1 pinch 
    Basil

Directions

1. Start a charcoal or wood fire or preheat a gas grill.

2. Peel the eggplant if the skin is thick or the eggplant is less than perfectly firm.

3. Cut the eggplant into 1/2 inch thick slices and salt if you desire.

4. Brush or spray oil onto each side of eggplant.

5. Sprinkle lightly with salt and pepper.

6. Broil or grill until browned on both sides, turning once or twice and brushing or spraying with oil if the eggplant looks dry.

7. Serve hot or room temperature garnished with fresh herbs.
